Instant Pot Cream Of Turkey Soup

My grandma was the first person to ever teach me about using up leftovers and it would have been her 91st birthday today. She always had a use for every type of leftover and was always incredibly frugal too.

If you are not frugal and want to more frugal with your home cooking, there is no better place to start than making your own soups from leftovers, or vegetables and meat you have on hand.

One old school recipe that I adore is Monday Pie. The idea is that you make a pie that is topped with mashed potatoes from what didn’t get eaten for the Sunday roast.

It is a wonderful concept but what I did instead is take what is leftover from the Monday pie and turn it into a delicious sauce to serve with pasta.

Next time you have a ladle of stew, casserole, one pot dinner, then use a hand blender to turn it into a sauce and then you have a base for a soup or a pasta dish.

This is a similar method that I am going to show you with this instant pot cream of turkey soup, though I do have another variation too if you are not using leftovers.

Can You Make An Instant Pot Leftover Turkey Soup?

Yes, you sure can and you will love it. A classic instant pot leftover turkey soup recipe will be loaded with flavour and is often more flavoursome than a classic cream soup because of the leftovers that are included.

I often reserve some of my leftovers from Thanksgiving and Christmas for other recipes. Such as using in a stock for chicken and rice and note how better it tastes when I have used them.

But of course, you might not have loads of leftovers like me, so below I have given you two different versions. Both of which is loaded with yummy turkey flavours and plenty of veggies.

Method 1: Leftover Turkey Instant Pot Soup

I have done similar before with my Christmas dinner soup which combines the leftovers from a Christmas roast and makes it into a soup. Originally made for Sofia when she was a baby because she couldn’t eat solids, this is something we make every year. We tried it before serving it to Sofia and thought it was the best soup ever and now its our go to Christmas soup!

But when you don’t have a full Christmas or Thanksgiving dinner leftover, this is your plan B.

What if you combined together your leftover turkey stock, your leftover turkey gravy and then combined it with some vegetables that are in your pantry?

It would be the most flavoursome turkey soup ever thanks to the mix of stock and gravy, plus it’s a great way to use up your turkey gravy.

You can also use the turkey carcass too or make it as a plan B to our instant pot turkey neck soup.

Best all, we are dumping all the ingredients into the instant pot and it’s the quickest instant pot soup you will ever make. Just prep some of our air fryer dinner rolls to serve with it!

Method 2: No Leftovers Instant Pot Turkey Soup

Another turkey soup I love to make in the instant pot, is with a cheap turkey thigh or a turkey drumstick.

They will be discounted after Christmas, and I will get a great price for one.

I will then sauté some vegetables with seasonings in the instant pot like this:

Then add a turkey leg to cook on top and then the turkey leg will be pull apart soft and become the turkey for the turkey and vegetable soup.

You can then blend it and serve it as a creamy turkey soup.

Of course, either method works very well and is ideal for an easy instant pot turkey and vegetable soup.

Method 3: Two Become One

This is what I prefer to do. You make the turkey soup first with the turkey leg and enjoy a family meal of yummy turkey soup and bread.

Then the next day, your leftovers have frozen corn and frozen peas added to them, a little more turkey stock and gravy you forgot about and you have leftover soup.

Instant Pot Turkey Soup Recipe Ingredients

Gravy – Never throw away your gravy again. Simply load it into the instant pot to make this creamy turkey soup instead. Whatever you have left can be used.

Stock – The same goes for leftover turkey stock. Or if you don’t have any leftover you can also add in frozen stock like I do sometimes. Note the frozen stock cooks from frozen creating the liquid needed for the instant pot to go to pressure.

Vegetables – You can add whichever vegetables you like. But I love to include carrots, celery, potatoes, and onion. Then I usually add in some corn and peas at the end to make the soup feed more people.

Seasoning – There is nothing worse than bland boring soup. I recommend basil, mixed herbs, salt, and pepper. Though you can add in your own favourites too.

Then for the kitchen gadgets that we have used in this healthy turkey soup instant pot recipe, it has just been our instant pot pressure cooker. We have this one along with a hand blender. This was used to blend the soup and make it thick and creamy without having to move it to the blender and create more washing up. Or you can just stir it and it will be more like a stew than a soup.

How To Make Instant Pot Turkey & Vegetable Soup?

  • Sauté. I recommend that you start by sauteing an onion. This will add flavour to your instant pot and then you can deglaze it with wine later on.
  • Dump. Add everything else to the instant pot, stir and place the lid on the instant pot.
  • Cook. Next you set the cook time to four minutes and let the instant pot work its magic, whilst you plan your favourite sides.
  • Blend. Once the instant pot beeps and you do a quick pressure release, blend with a hand blender until smooth. Or keep it chunky for more of a stew consistency.
  • Serve. Serve with bread rolls and enjoy!

Instant Pot Turkey Soup Time

Cooking turkey soup in the instant pot is QUICK. So quick that you have a cook time of JUST 4 minutes with a quick pressure release.

That is because the instant pot is doing its magic and then whilst it is cooking you can focus on what to serve with your turkey leftover soup.

Big HINT for bread as bread is amazing with this soup and I recommend our bread maker beer bread or our air fryer dinner rolls.

Is This An Instant Pot Turkey Gravy Soup?

Yes, it is. The main ingredients for the leftover soup (well beyond the veggies) is turkey gravy and turkey stock.

What is great about this turkey gravy soup is that you can swap the turkey for chicken, beef, pork etc and achieve the exact same thing with other meats.

  • Peel and dice your vegetables.

  • Peel and dice your red onion. Sauté in the instant pot with some extra virgin olive oil on the sauté setting. When the onion softens press cancel.
