Window sweets, which are known by various names such as window bread or window lady, are one of the most special and delicious Iranian sweets that are often prepared during Eid and served on Eid sights. Window confectionery molds have different beautiful designs. The long handles of these molds help you dip the ink in it without letting it get close to the hot oil and let it fry. However, you should be very careful when preparing window pastries so that your skin does not come in contact with hot oil or splash on you.
ingredients :
- Starch = half a glass
- Mix rosewater and water = half a glass
- A mixture of rice flour and white flour = half a glass
- Eggs = 2 pcs
- Saffron mixed with hot water = 1 tablespoon
- Powdered sugar = the amount needed
- Oil = the amount needed
Instruction :
Step 1: In a bowl, pour starch, water and rose water and stir with a mixer or fork until well mixed and hom*ogeneous, then add the eggs one by one and mix well, and after the ingredients are well mixed, saffron Add as well.
Step 2: After mixing the ingredients, add rice and wheat flours to the ingredients and mix well again, then put in the refrigerator for 15 minutes, in the meantime, pour a lot of oil in a non-stick pan and let the oil heat well. Put the window pastry mold in the oil and turn down the heat under the pan and let the mold heat up a bit.
Step 3: Place the bowl containing the pastry ingredients near your pan and dip the hot mold into the liquid and pause for a few seconds, then quickly dip the mold into the oil and shake the liquid out of the mold with a quick shake of your hand. Fry in oil for 2 minutes, reheat the mold and put it in the ingredients and fry the sweets in the same way.
Step 4: After the pastries are fried, place them on a kitchen towel or thick paper towel to remove excess oil. Then place in the desired dish and sprinkle powdered sugar or sifted sugar on them.
Points :
1- If you cover this pastry with cellophane and keep it out of the refrigerator for up to two weeks, sift the flour mixture before use (in general, pastry flour should be at least 2 times and regular flour should be at least Sift 10 times), if after mixing all the ingredients, the mixture had impurities or flour-shaped balls, you can pass the ingredients out of the refrigerator through a large sieve.
2- The concentration of ingredients should be normal (neither too hard nor too loose), if the mixture was too loose you can use a maximum of 1 tablespoon of white flour and if it was too hard use half a cup of regular cold milk.
3- When frying the sweets, the mold should be hot enough (not too much). When you put the mold in the liquid, make sure that the liquid does not come out of the top of your mold (do not immerse the whole mold in the liquid) because in this The face of the material in the oil will not separate from the mold.
4- You can use various molds for window sweets to fry the sweets, you must have a high speed of action when preparing window sweets, you can use a small amount of cardamom powder or cocoa powder or coffee powder instead of saffron and… Use.
